Ingredients

For the royal icing, you will need:

  • 3 large egg whites
  • 1 teaspoon fresh lemon juice
  • 4 cups confectioners’ sugar
  • Food coloring (optional)

Instructions

To make the gingerbread house, preheat the oven to 350°F. Grease a 9x13-inch baking pan with butter or non-stick cooking spray. In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, and baking soda. In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and brown sugar until light and fluffy. Beat in the molasses and egg. Gradually add the flour mixture, mixing until just combined. Divide the dough in half and press each half into the prepared pan. Bake for 12-14 minutes, or until golden brown. Let cool completely before assembling the house.

To make the royal icing, place the egg whites and lemon juice in the bowl of a stand mixer fitted with the whisk attachment. Beat on low speed until the egg whites are foamy. Gradually add the confectioners’ sugar, and beat on low speed until combined. Increase the speed to medium-high and beat until the icing is thick and glossy. If desired, divide the icing into separate bowls and add food coloring to each bowl. Transfer the icing to a piping bag fitted with a small round tip, and pipe the icing onto the cooled gingerbread pieces to assemble the house.
